Thanksgiving’s not complete without a green bean casserole. I like the old school recipe: green beans, a can of cream of mushroom soup, and French’s French Fried Onions (as many as my mom would let me cram on top – same with marshmallows on the yams).
I needed a lighter, vegetarian element in the Thanksgiving Birthday Brunch menu so I decided to make this meatless (though sausage crumbles would have been really good mixed in). I went as traditional as possible while keeping with the brunch theme. The quiche is crustless so it also brings a nice low carb aspect to the table (I’m not counting the fried onions. Those are essential).


I made this recipe for the first time at the Thanksgiving Birthday Brunch party and it turned out great! There was a nice saltiness with the crispy fried onions/cream of mushroom soup and a lightness in the eggs. (It was also a nice element to add in to bites of the Thanksgiving Plate Cakelette.)

Green Bean Casserole Quiche
- 8-12 ounces of frozen french green beans, thawed
- a dozen eggs
- French’s French Fried Onions
- can of cream of mushroom soup (I used about 1/3 of the can)
- 1/2 cup milk
- 1/2 cup cottage cheese (I use nonfat, okay if you don’t use)
- 1/2 cup flour
- 1/2 teaspoon baking powder
- salt and black pepper
Preheat oven to 375 degrees F. Mix the flour, baking soda, salt and pepper in a small bowl and set aside. If you want to keep it low carb, you can omit the flour and baking powder. The quiche will be denser but fine. In a large bowl, whisk together the eggs (use part of the dozen as egg whites of you want) and milk. Slowly whisk in the flour mixture. You may have some chunks, try to work them out, but it’ll be okay if you can’t get them all. Incorporate the cottage cheese and thawed green beans. Pour everything into a 9×13 inch pan coated with nonstick spray.
Bake for 25-30 minutes or until the top is browned and the quiche is pulling away from the edges. Coat the top of the quiche with a thin layer of cream of mushroom soup, lightly pressing the fried onions on the top. Broil or place on the top rack of a 350 degree F oven until the fried onions are browned and crispy. A post on how to serve everything hot at brunch is coming soon!

any idea if the recipe would change if you wanted to use a crust?
You should be able to use the same recipe in a crust. If you add the flour and baking powder it will rise though, so careful not to over fill!
If you make this recipe mixed with Bisquick and eggs together… you really don't need a crust. It will turn out just as good all baked within together for that heavenly taste.
can you use an egg substitute??
Absolutely! You can use a small carton of substitute and a few eggs, or all straight substitute, or egg whites etc. all depending on preference and dietary restrictions.
about how many will this serve?
It all depends on portion size and what else you are serving. If this was your main dish, It could serve 4-6 people. As a side, you can get 12 portions out of it. I plan to serve it again soon and make it appetizer sized with 24 small portions.
