I made three different kinds of bite sized treats for my brother Ryan‘s birthday/live show on Thursday night in the private room of SPiN NYC - brownie bites with caramel and sea salt sprinkled with sea salt from Mt. St. Michel, mini Boston creme pie cakes, and funfetti cookies with almond buttercream frosting and nonpareils sprinkles.
I used this funfetti cake mix cookie sandwich recipe using light cream cheese. The batter was super sweet so instead of making them sandwiches, I made little bites. I rolled about an inch wide dough ball then flattened it with a fork (next time I would have refrigerated the dough a bit to make flattening them easier). For the frosting, I used half of this buttercream recipe substituting almond extract for vanilla and 1% milk for the cream.
The cookies came out a bit like cake with a toasted crust (yum). The almond frosting was airy and oh, so delicious. Funfetti and sprinkles is always a birthday party favorite so expect people to reach for more than one bite. Thankfully this recipe made a bunch!
